Ingredients
For the Shrimp
- 2 pounds medium size shrimp
- 1/4 cup sugar
- 1/4 cup kosher salt
Note: when you put 2 pounds of medium shrimp. Each pound should be 31-35. You can also add extra poached shrimp.
For the Cocktail Mixture
- 2 cup Chilled Tomato Juice
- 1 cup Ketchup
- 1 cup Chilled Clamato Juice
- 5 cup Fresh squeezed lime juice
- 2 tbsp Hot Sauce
- 1 tbsp Worcestershire sauce
- 2 cups English cucumber- seeded, 1/8-1/4 inch dice
- 1 cup red onion
- 4 tbsp jalapeños
- 4 tbsp chopped fresh cilantro
- 2-3 medium avocados
Instructions
Prepare the Shrimp
- Fill half bowl with water and ice.
- Combine sugar, salt and 6 cups of water in a medium pot. Afterwards, boil it over medium-high heat.
- In the boiling mixture, add the shrimp and poach until the shrimp gets opaque and pink.
- Put shrimp to ice bath .Then cool it for 5 minutes. Once the shrimp gets dry cut each shrimp into two to three bite-sized pieces
- You should make sure to set these shrimp aside if you are adorning with one shrimp per serving.
Assemble the Mexican Shrimp Cocktail
- Add Clamato juice, tomato juice, lime juice, ketchup, hot sauce and Worcestershire sauce in a bowl then mix these ingredients together. Afterwards, add chopped shrimp, red onion, cucumber and jalapeño.
- Cover it and chill in refrigerator for 1 to 3 hours. You can also add pepper hot, salt and lime juice.
- Fold in the cilantro and avocado
