The dish become more delicious if you eat with corn tortilla chips.
Hint: I actually love to prepare this dip at room temperature so don’t keep it hot otherwise your dip will be gone.

Instructions
- Remove the corn from the cob. To catch the corn, I usually use a Bundt pan. Cut the corn off the cob by running your knife down the cob. Afterwards, scrape out all the corn milk by using the back of the knife.
- Put the corn in a pot with enough water. You should cook the corn on medium heat so that it will not burn. After boiling, turn off the heat. Drain the liquid completely, if you are using canned corn for the recipe
- Put the corn kernels in a big bowl. Add sour cream, green onions, shredded cheese, cream cheese, cumin, jalapeno, chili powder, cilantro and lime juice. Afterwards, mix the ingredients by an electric mixer or by hand.
- In a cooking dish, put the corn dip mixture. I prefer to use a glass 9-inch pie pan. However any size of pie pan will be ok
- Cook it at 375 degrees until top is golden brown and bubbling. Remove carefully from the oven and make cool slightly. Add some green onions and cilantro for a good taste
- If desired, sprinkle with hot sauce. I assure you, you will like it on the cheesy corn dip.
Substitutions
Corn Dip with Cream Cheese recipe is forgiving and quite adaptable. Make it your own by using what you already have.
Sour Cream – You can use Plain Greek yogurt as a substitute for sour cream.
Jalapeños – Use fresh or pickled jalapenos. If you don’t have fresh jalapenos, you can use pickled jalapenos. I always store pickled jalapenos in the refrigerator. Many people can tolerate the heat of pickled jalapenos because they are very light.
Mayonnaise – In this dip, you should not use Miracle Whip as a substitute for Mayonnaise because Miracle Whip is too sweet for Corn Dip with Cream Cheese Dish
Garlic – In this dip, you can use garlic powder as a substitute for garlic. A half teaspoon of garlic powder is sufficient for this dip.
Cheese – You can use any shredded cheese but I use extra sharp cheddar cheese. I usually consider mild cheddar, pepper jack, Monterey Jack etc. However, I don’t use mozzarella or any of the milder cheeses.
Green onions – You can also use red onions if you don’t have green onions. There is a local restaurant in our city that offers a signature dip. They use diced red onions with this dip to make it yummy.
Equipment
With help of Glass baking pans, you can cook all in one dish. I like this easy appetizer. I often use a 9-inch pie pan to cook this dish. However, you can use pan of any size. You can also use metal pans for cooking this dish.
You should watch the cooking time. Sometimes, items bake faster than expected time. It is good to set your timer for shortest recommended cooking time. If the recipe require more time to cook, give more time until the dish is fully cooked.

Mexican Cream Cheese Corn Dip recipe is a mixture of cream cheese, crunchy corn, fresh cilantro and spices.
Ingredients
- 3 cups corn
- ¼ cup sour cream
- 1 cup shredded cheddar cheese
- 8 ounces cream cheese softened
- 1 teaspoon chili powder
- 2 cloves garlic
- ½ teaspoon cumin
- 1 Tablespoon jalapenos chopped
- ½ lime juiced
- ¼ cup cilantro plus more for garnish
- 2 green onions sliced, optional for garnish
- Pepper Sauce such as Crystal Hot Sauce
- Frito Scoops
These are ingredients to prepare Corn Dip with Cream Cheese dish for one person (x1). For two persons, double the quantity of each ingredients and for 3 persons, triple quantity of each ingredient and so on.
Method
- Set the temperature of oven at 375℉.
- If you are using fresh corn then cut corn off the cob. Removing corn “milk”. This is made easy by placing the corn on the cob in the Bundt pan’s hole.
- Add corn in a bowl. If you are using canned corn, drain all the liquids off from canned corn.
- Add all other ingredients except Fritos and sauce.
- Fill a 9-inch baking pan or pie pan with corn mixture.
- Cook it at 375℉ until the top of the corn dip becomes golden brown.
- Add some extra green onions and cilantro for garnish.
- Pour the hot pepper sauce on the dip.
- Serve Corn Dip with Cream Cheese dish at hot or room temperature along with tortilla chips or Frito Scoops.
